There’s Gold in Southern Ontario’s Golden Horseshoe.

Golden Horseshoe Team Picture The Golden Horseshoe Culinary Team won a total of 13 medals for Canada at the World Culinary Olympics in October, 2012. They’re getting ready to compete at the World Culinary Cup in Luxembourg in 2014 and return to the World Culinary Olympics in 2016.

In an effort to raise funds to enable the team to continue competing, the award winning chefs strutted their stuff recently at the Crowne Plaza Toronto Airport Hotel, led by executive chef Tony Fernandes and Garde Manger, Chaminda Palihawadna, to prepare an outstanding dinner: an authentic “Titanic recreation dinner” for hundreds of guests. Many dressed in formal attire befitting the occasion. The original twelve-course meal was shortened to seven courses to save time and…our waistlines. Wine flowed like…well, wine, and was generously sponsored by Peller Estates. And what a dinner it was. Clearly, dining habits were much different than they are today.

Chicken Lyonnaise. Served with Chateau Potatoes, Minted Green Pea Timbales and Turnip Puree

Seventh Course – Dessert

Pavlova Mion. A Delightful Mimi Pavlova Topped with Melon and Raspberries

Served with Tea or Coffee
