SARA SAYS…

The region of Emilia Romagna, renowned for its Parmigiano-Reggiano, prosciutto di Parma, balsamico from Modena and some wonderful wines, has given us one of its most talented culinarians, Gabrielle Paganelli. His kitchen reflects his love of traditional Italian dishes and so, being a perfectionist, he has set up his own farm near Stoney Creek where he raises wild boar. We’re the lucky ones to enjoy house-made salumi and charcuterie, pancetta, capicola, bresaola, guanciale, cotechino and more.

At Paganelli’s, the aroma from the wood fired pizza oven is seductive. Already intimate with traditional pizza Margherita, we’ll have ours with sliced octopus, arugula, celery root and sundried tomatoes. The award-winning pheasant and black truffle risotto is my favourite, though others prefer risotto with osso buco or stuffed quail. The olive oil used here is the finest, and it enhances the already great flavours of homemade pasta, focaccia and piadina. Questions? The attentive staff have the answers at their fingertips.

Heavy hewn wood tables add to the rusticity and warm ambience of the room. It’s Italian to the core.
