Each Ritz-Carlton Hotel has a unique set of bars and dining rooms that surprise and delight guests, and this new hostelry is no exception. The intriguing cheese cave at TOCA, an acronym for Toronto Canada, is where you can taste from a $50,000 stock of the world’s most distinctive cheeses and choose wines to match with the aid of cheese and wine sommeliers. The TOCA Bar, a Latin tapas-style bar and lounge with a raw bar has immediately become a city hotspot. DEQ, with its outdoor pizza oven and totally casual ambience is a summer haven.

Chef Tom Brodi presides over the kitchen, presenting dramatic, fanciful dishes, giving this brand new restaurant instant maturity. His Chef’s Tables dinners will amaze you. This chef likes to have fun with his food. Foie gras, a serious item, is topped with pure maple syrup cotton candy. Fish and chips are beer battered lobster, crisp and crackling. Miso glazed cod has distinct top notes of Maple syrup. His trio of scallops is enhanced by Abitibi caviar and sour cream.

Dessert is a must. Try the trio of soufflés that come with a trio of sauces. TOCA is not a one-time restaurant; you will be drawn back again and again.
