There are few trendy design maneuvers at Pangaea. A cool, airy and spacious room with an extravagant high ceiling is highlighted by an ever-changing floral display. There is the bar at the side, where more people than ever enjoy dining, and the totally private room where important events and dinners occur. Shades of blue calm the who’s who of the business and art world that converge here for lunch and dinner, assisted by a wait staff that have been here as long as I can remember. Co-owner Peter Geary is in-house, spreading congeniality and cordiality. Recipients of the Wine Spectator Award of Excellence for many years, their wine list yields many rewards.
The real alchemy takes place in co-owner Martin Kouprie’s kitchen. His purity of flavours and impeccable, elegant cooking has been the norm since Pangaea opened. There are daily specials and seasonal surprises; always consistent is the Ocean Wise program of sustainable seafood. Yet, we have our favourites: organic chicken breast, grilled provimi liver, halibut, sea bass and diver scallops. They never disappoint. Over the years, Kouprie has had thousands of requests for his recipes. Now he has put them all in a book that really does answer the question: Pangaea: Why It Tastes So Good.
