Romance wafts playfully through this sparkling dining room that is set under a magnificent glass canopy. Days, the sun streams into the airy room, evenings, there is a magnificent view of the city’s nightscape. Cobalt blues enhance crisp white napery and fresh flowers add to the scene. The ambience is casual and friendly and the lounge, for lighter fare, is adjacent to the dining room. Tucked into the elbow of the room is the Dan Boudanis Band, which plays the jazz that everyone loves. He’ll create a set of classics just for you and present the list on a card. How special is that!
There are also special things going on in the kitchen. Executive Chef John Mitchell and Executive Sous Chef Alex Shterenberg bring their expertise to the fore and recognize the quality and scope of local products. The policy: local/Canadian/organic/sustainable/protecting endangered species. Beef carpaccio is elevated with black olive oil, crushed walnuts and parmesan, roasted Alberta lamb loin gains stature with candied beets and potato pave, caramelized fennel enhances B.C. wild salmon. Not to be missed kicker: Shterenberg pours raspberry purée into a bowl and adds liquid nitrogen. Dramatic, smoke-like vapour pours over the table as he quickly stirs and creates raspberry sorbet. The taste amazes. You will want to break into applause.
