Sokol Blosser, one of the pioneers of Oregon’s wine industry, is also one of its most recognized. Having visited the winery in Dundee Hills an hour south of Portland, I was eager to taste their Evolution blends recently in Toronto–displaying the fun whimsical side of the winery.

Bottle - Evolution White The Evolution White—available in LCBO general listing—is a harmonious blending of nine varietals: Pinot Gris, White Riesling, Muscat, Gewürztraminer, Muller-Thurgau, Semillon, Pinot Blanc, Sylvaner, Chardonnay. This is alchemy; and it is quite versatile in its pairings with spicy foods like Asian, Indian, Mexican or Caribbean. Well balanced, its tropical bouquet holds through to the palate, and I have enjoyed it simply on its own. This is a perfect wine for the summer!

Bottle - Evolution Red The Evolution Red—currently available through private order—is an easy drinking blend of Syrah, Sangiovese, and Montepulciano, with a little bit of Evolution White mixed in. Its velvety soft and easy tannins pair with comfort food or anything off the grill. It’s not a heavy or sweet concentrated fruit, but from the aroma to the lingering finish, notes of ripe berries, plum and cinnamon are revealed. Try it with your next pizza!

The real evolution, however, is in the development of Sokol Blosser’s world class, terroir-driven Pinot Noir. Harvested and sorted by hand, fermented in small lots, and aged 16 months in French oak, the Dundee Hills Pinot Noir is a well balanced combination of the toastiness mushroom of oak and ripeness of fruit, with earthiness and minerality, all enveloped in a soft, luscious, lingering finish. The classic pairing of Oregon Pinot Noir is with wild salmon or wild mushrooms to bring out the earthiness. We recently paired a Sokol Blosser Pinot Noir with a hearty porcini mushroom risotto at the acclaimed Toronto Restaurant, Pangaea.
